- Okra (grab a bunch full)
- Olive oil
- Preheat oven to 425°F
- Chop okra into bite sized pieces (or leave whole if desired)
- Coat in okra in olive oil (~about 2 tablespoons for every handful)
- Season with salt and pepper
- Bake on a baking sheet for 15-20 minutes, or until it's tender and slightly browned
