Roasted Okra

This simple, flavorful dish is healthy and easy to prepare while still tasting delicious. Baked okra is the perfect way to incorporate vegetables into your eating habits. This recipe is quick and can be enjoyed as a snack or the side any meal. You can even throw these in to any salad to add some extra flavor. Prep Time: 5 minutes

Cooking Time: 15-20 minutes

Yields: 4 servings

 

Ingredients


  • Okra (grab a bunch full)
  • Olive oil
  • Salt
  • Pepper

     

    Directions


    1. Preheat oven to 425°F
    2. Chop okra into bite sized pieces (or leave whole if desired)
    3. Coat in okra in olive oil (~about 2 tablespoons for every handful)
    4. Season with salt and pepper
    5. Bake on a baking sheet for 15-20 minutes, or until it's tender and slightly browned

       

      Crunchy Mama Tip

      Try baking your okra in a glass dish or a baking sheet not lined with aluminum foil. Some non-stick pans contain a toxic coating that is harmful to our health. Cooking with aluminum foil allows some of this aluminum to seep into our foods.
