For those of us who can’t resist a sweet treat, we created these Power Glow Brownies: a highly nutritious twist on the classic brownie, packed with protein, clean ingredients, and irresistible flavor. Ingredients

1 cup cooked black beans (or chickpeas, well-rinsed)

2 large eggs (or flax eggs for vegan option: 2 tbsp flaxseed meal + 6 tbsp water)

1/3 cup almond butter (or peanut butter)

1/3 cup unsweetened cocoa powder

1/3 cup protein powder (chocolate or vanilla, plant-based preferred)

1/2 cup Medjool dates (soaked in warm water if dry) OR 1/3 cup pure maple syrup/honey

2 tbsp coconut sugar (optional, for extra sweetness)

2 tbsp coconut oil or olive oil

1 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp sea salt

1/3 cup dark chocolate chips (at least 70%, optional)
Directions

Preheat oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.

In a food processor or blender, combine beans, dates (or maple syrup/honey), eggs, nut butter, oil, and vanilla. Blend until smooth.

Add cocoa powder, protein powder, baking powder, and salt. Blend again until well incorporated. Batter will be thick.

Fold in dark chocolate chips (if using).

Spread batter evenly into prepared baking dish.

Bake for 25–30 minutes, until edges are firm and a toothpick inserted comes out mostly clean (slightly fudgy is okay).

Let cool completely before slicing into squares.
Store in the fridge for up to 5 days or freeze for 2 months.
