  • 3 medium or large beets in thick slices
  • Avocado oil
  • Freshly squeezed orange juice
  • Kosher salt
  • Pepper
  • Fresh thyme 



  1. Roast in convection oven at 350 for about an hour or until roasted and caramelized
  2. Optional- Add goat cheese and sprinkle with ground walnuts
