Here’s one of my favorite Brazilian comfort foods that’s super easy to make: "Torta de Liquidificador" (Blender Pie)! This savory pie has a soft, bread-like crust and can be filled with your favorite ingredients like vegetables, vegan “minced meat,” or any filling you love.
Brazilian Blender Pie Recipe

Ingredients
For the Batter:
- 2 cups of milk (plant-based options are fine—just ensure they’re unsweetened and unflavored)
- 3/4 cup of oil (avocado or olive oil)
- 3 large eggs
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
For the Filling:
- 1 bag of organic frozen veggies (e.g., corn, carrots, peas, green beans, or your favorite mix)
- 1/2 cup grated cheese (mozzarella, Parmesan, or your choice)
- 1/2 cup diced tomatoes (optional)
- 1/4 cup chopped olives (optional)
- Salt, pepper, and any preferred seasonings to taste
- Fresh herbs like parsley or green onions, for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a medium baking or casserole dish.

- In a blender, add the milk, oil, and eggs, blending until smooth.
- Add the flour, baking powder, and salt, blending again until smooth and lump-free.

- Pour half of the batter into the greased dish.
- Evenly spread your filling ingredients (veggies, cheese, tomatoes, olives, etc.) over the batter.
- Pour the remaining batter over the filling, spreading it to cover.

- Bake for about 35-40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
