Blender Bread Pie

Here’s one of my favorite Brazilian comfort foods that’s super easy to make: "Torta de Liquidificador" (Blender Pie)! This savory pie has a soft, bread-like crust and can be filled with your favorite ingredients like vegetables, vegan “minced meat,” or any filling you love.

Brazilian Blender Pie Recipe

Yield: 6-8 servings

Ingredients

For the Batter:

  • 2 cups of milk (plant-based options are fine—just ensure they’re unsweetened and unflavored)
  • 3/4 cup of oil (avocado or olive oil)
  • 3 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

For the Filling:

  • 1 bag of organic frozen veggies (e.g., corn, carrots, peas, green beans, or your favorite mix)
  • 1/2 cup grated cheese (mozzarella, Parmesan, or your choice)
  • 1/2 cup diced tomatoes (optional)
  • 1/4 cup chopped olives (optional)
  • Salt, pepper, and any preferred seasonings to taste
  • Fresh herbs like parsley or green onions, for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a medium baking or casserole dish.

  2. Prepare the Batter:

    • In a blender, add the milk, oil, and eggs, blending until smooth.
    • Add the flour, baking powder, and salt, blending again until smooth and lump-free.
  3. Layer the Pie:

    • Pour half of the batter into the greased dish.
    • Evenly spread your filling ingredients (veggies, cheese, tomatoes, olives, etc.) over the batter.
    • Pour the remaining batter over the filling, spreading it to cover.
  4. Bake the Pie:

    • Bake for about 35-40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  5. Serve:

    • Let the pie cool slightly before cutting into squares. Garnish with fresh herbs if desired, and serve warm or at room temperature.

Crunchy Mama Tips

  • Fillings: Get creative with your fillings! Try broccoli, bell peppers, or add a bit of cream cheese for a creamier texture. You can mix in any vegetables you like and customize it however pleases you.
  • Batter Consistency: If the batter feels too thick, add a bit more milk; if too thin, add a little more flour.
  • Storage: Store leftovers in the fridge for up to 3 days, and reheat in the oven or toaster oven.
