Ingredients

  • Base: 1 pre-cooked polenta log, sliced into ½-inch rounds

  • 2 tbsp avocado oil for grilling

Topping Options

  1. Grilled Shiitake Mushrooms & Scallions

    • 1 cup shiitake mushrooms, sliced

    • 2 scallions, chopped

    • Dash of soy sauce or tamari 

    • cooking white wine

  1. Caprese-Style

    • Fresh mozzarella or burrata (or vegan mozzarella), sliced

    • 1 fresh tomato, diced or sliced

    • 2 tbsp pesto

    • Fresh basil leaves for garnish

    • 1 cup tomatoes, diced

    • 1 garlic clove, minced

    • 2 tbsp fresh basil, chopped

    • 1 tbsp olive oil

    • Salt and pepper to taste

  3. Bell Pepper Medley

    • 1 cup diced bell peppers (red, yellow, orange)

    • 1 tbsp balsamic vinegar

    • Fresh thyme or parsley for garnish

    • Optional: Sprinkle Feta (or vegan feta) 
  1. Avocado & Mango Salsa

    • 1 ripe avocado, diced

    • ½ cup mango, diced

    • 1 tbsp lime juice

    • Sprinkle of chili flakes

  2. Hummus & Cucumber

    • 1 cup hummus (store-bought or homemade)

    • Thin cucumber slices

    • Fresh dill for garnish

Instructions

  1. Grill the Polenta:

    • Heat a grill pan or skillet over medium heat. Brush both sides of the polenta slices with avocado oil.
