Vegan Mango Lassi

Mango lassi is a traditional Indian beverage that combines the tropical sweetness of mangoes with the creamy texture of yogurt, making it a popular drink especially during the hot summer months. This vegan version uses almond milk to keep it dairy-free while maintaining the refreshing and nutritious qualities of the original. Mangoes are not only delicious but also packed with vitamins A and C, making this lassi both a tasty and healthy treat.

Ingredients:

  • 3 cups frozen mango chunks
  • 2 cups unsweetened vanilla almond milk 
  • Seeds from 2-3 cardamom pods 
  • Maple syrup, to taste

Instructions:

  1. Prepare Cardamom Seeds: Gently crush the cardamom pods with the flat side of a knife to open them. Remove the seeds and discard the pods. 
  2. Blend Ingredients: In a blender, combine the frozen mango chunks, almond milk, cardamom seeds, and a small amount of maple syrup (a tablespoon).
  3. Blend Until Smooth: Blend all the ingredients until smooth and creamy. If the mixture is too thick, you can add a bit more almond milk to reach your desired consistency.
  4. Taste and Adjust: Taste the lassi and adjust the sweetness by adding more maple syrup if needed.
  5. Serve: Pour the lassi into glasses and serve immediately.
