Potato and leek creamy soup

Not only is this soup delicious and comforting, but it is also incredibly easy to make and versatile. It can be served as a main course or as a side dish, and it pairs well with a variety of bread, crackers, or salad. Creamy potato and leek soup is also a great way to incorporate more vegetables into your diet, as leeks and potatoes are both rich in vitamins and nutrients. This dish is perfect for a cozy night in or a dinner party with friends and family, and it is sure to become a staple in your recipe collection.

Yields: 4 servings

 

Ingredients


  • 1 onion, chopped
  • 2 medium-sized leeks, chopped
  • 1/4 cup olive oil or avocado oil 
  •  2 cloves garlic, minced
  •  5 medium potatoes peeled and chopped into small pieces
  •  1 teaspoon dried oregano
  •  1 bay leaf
  •  4 cups vegetable broth
  •  salt to taste
  •  ground black pepper to taste

     

    Directions


    1. In a large soup pot, heat oil over medium heat. Add onions, leak, garlic and stir fry until onion is tender, softened and fragrant, about 5-7 minutes.
    2. Next add potatoes and stir fry for 2 min.
    3. Stir in vegetable broth, bay leaf, oregano and salt. Bring to a boil. Reduce heat and simmer for 10-20 minutes or until vegetables are cooked.
    4. Remove the bay leaf and add soup to a blender and blend until its smooth and creamy. Add more broth if the soup is too thick. You can also use a hand blender.
    5. Add ground black pepper and olive oil to each individual bowl.
    6. Optional 1: Garnish with chopped parsley
    7. Optional 2: Add crispy sauteed collard greens (recipe here)
    8. Optional 3: add ons- croutons.

    Crunchy Mama Tip: 

    Garnish with Popped Water Lily Seeds as a crunchy topping to this dish instead of crackers or croutons! This will add crunch and flavor. Also enjoy some melt in your mouth chocolate truffles for dessert after this nutrient packed meal! In addition, add in some Vitamin D3, K12, and Omega 3 drops to supplement this meal if desired.
