  • 2 large zucchinis, thinly sliced
  • 1 large eggplant, thinly sliced
  • 4 ripe tomatoes, sliced
  • 1 cup mushrooms, thinly sliced
  • 2 cups fresh spinach leaves
  • 2 cups vegan or conventional mozzarella cheese, shredded (your choice)
  • 1 cup vegan or conventional Parmesan cheese, grated  (your choice)
  • 1 teaspoon dried or fresh oregano
  • Fresh basil leaves
  • 2 cups tomato sauce (try our homemade tomato sauce recipe)
  • 2 cups Alfredo sauce blended with all the spinach leaves (try our dairy-free, gluten-free Alfredo Sauce)
  • Lasagna pasta sheets (your choice of conventional or gluten-free)


  1. Preheat your oven to 375°F (190°C).

  2. Blend the Alfredo sauce with all the fresh spinach leaves.

  3. In a lasagna dish, spread a thin layer of tomato sauce.

  4. Create a layer with lasagna pasta sheets. Add zucchini slices, basil leaves, and sprinkle a little bit of oregano. Cover with Alfredo sauce and mozzarella.

  5. Add another layer of lasagna pasta sheets. This time, incorporate eggplant, sliced tomatoes, mushrooms, mozzarella, basil leaves, and sprinkle a little bit of oregano. 

  6. Repeat the layers until all ingredients are used or the dish is full. If you have limited sauce remaining, you can mix both sauces together for the final layer. Finish with a layer of cheese on top by sprinkling mozzarella and Parmesan cheese. Add extra basil leaves and sprinkle a little more oregano if desired.

  7. Baking Instructions:

    Bake in a preheated oven at 375°F (190°C) for 15-20 minutes. The baking time may vary depending on whether your lasagna sheets are pre-cooked or require baking in the oven.

    • If using pre-cooked lasagna sheets, cover the dish with aluminum foil and  bake for 15-20 minutes or until the cheese is golden and bubbly.
    • *If using uncooked lasagna sheets, cover the dish with aluminum foil for the majority of the baking time instructed.
    • In the final 1-3 minutes, remove the foil and broil the lasagna until the cheese on top achieves a golden and slightly darkened texture.
