Want a delicious split pea soup recipe? We've got you. This creamy soup is outrageously flavorful and uses ingredients like bay leaf, oregano, and garlic to enhance the taste. This soup is perfect for dinner with some fresh bread on the side, or as a quick lunch as a re-heated leftover.

Yields: 4-5 servings
Ingredients
- 1onion, chopped
- 1cup chopped leak
- 1/4 cup olive oil or avocado oil
- 2 cloves garlic, minced
- 1 medium size potato chopped
- 1 teaspoon dried oregano
- 1 bay leaf
- 2 cups dry split peas
- 4 cups vegetable broth
- salt to taste
- ground black pepper to taste
Directions

In a large soup pot, heat oil over medium heat. Add onions, leak, garlic and stir fry until onion is tender, then add split peas, chopped potatoes and vegetable broth, bay leaf, oregano and salt. Bring to a boil. Reduce heat and simmer for 20 minutes or until split peas are cooked.

Remove the bay leaf and blend until creamy. Add more broth if the soup is too thick. You can also use a hand blender.

Add ground black pepper and olive oil to each individual bowl.

Optional: add croutons, salty granola, finely chopped spinach or hemp seeds to your bowl.

Notes
- Soak the split peas overnight so it will cook faster and rinse before adding to the pot.
- You can also add chopped carrots, potatoes and celery to the creamy soup after blended.
