"Rewilded" Burdock & Miso Glazed Roots

"Rewilded" Burdock & Miso Glazed Roots

Step into the "Rewilding" movement with this vibrant side dish that bridges ancestral herbalism and modern microbiome science. Burdock root has long been a staple in traditional wellness for its ability to support blood purification and a clear complexion. By pairing these deep-earth roots with raw, unpasteurized miso, we create a "living" dish that feeds your gut-skin axis and honors your body’s internal ecology.

Make it a Main: Serve these glazed roots alongside our "Earth-Root" Sunchoke & Leek Biome Soup for a total "Personal Ecology" reset.

Prep Time: 10 minutes

Cooking Time: 10 minutes

Yield: 2–3 sides

Ingredients:

  • 2 large Burdock Roots, scrubbed well (keep the nutrient-dense skin intact)

  • 1 cup Rainbow Carrots, sliced into thin matchsticks

  • 1 tbsp Unpasteurized Miso Paste (added at the end to keep probiotics alive)

  • 1 tbsp Maple Syrup

  • 1 tsp Toasted Sesame Oil

  • Garnish: Black Sesame Seeds

Instructions:

  1. Slice the scrubbed burdock and carrots into uniform matchsticks.

  2. Lightly steam or sauté them in a splash of filtered water until just tender-crisp. Avoid overcooking to maintain the integrity of the prebiotic fibers.

  3. In a small bowl, whisk together the miso, maple syrup, and sesame oil with a teaspoon of warm water until smooth.

  4. The Critical Step: Remove the roots from the heat entirely. Toss with the miso glaze while the roots are warm but not boiling. Keeping the temperature low is the only way to preserve the live enzymes and probiotics in the miso.

  5. Garnish with black sesame seeds and serve immediately.

Crunchy Mama Tip: Burdock is a "root-layer" superfood. It contains high levels of inulin, which acts as a specialized fertilizer for your microbiome. When sourcing your Burdock, look for roots that still have a bit of earth on them—this is a sign they haven't been over-processed, keeping those vital soil-based precursors right where they belong.
