Ingredients:

1 ½ cups mashed cooked sweet potato (about 2 medium)

1 tsp vanilla extract

1 ¾ cups whole wheat flour or oat flour

½ cup chopped walnuts or pecans
Instructions:

Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment.

In a large bowl, whisk together mashed sweet potato, eggs, oil, maple syrup, and vanilla.

In another bowl, mix dry ingredients: flour, baking soda, baking powder, salt, and spices.

Combine wet and dry ingredients until just mixed. Fold in nuts.

Pour batter into loaf pan and bake for 45–55 minutes, or until a toothpick comes out clean.
