Sweet Potato Walnut Bread

Baking Time: 45–55 minutes

Yield: 1 loaf (8–10 slices)

Ingredients:

  1. 1 ½ cups mashed cooked sweet potato (about 2 medium)

  2. 2 eggs (or flax eggs for vegan)

  3. ¼ cup melted coconut oil or olive oil

  4. ¼ cup pure maple syrup

  5. 1 tsp vanilla extract

  6. 1 ¾ cups whole wheat flour or oat flour

  7. 1 tsp baking soda

  8. ½ tsp baking powder

  9. ½ tsp sea salt

  10. 1 tsp cinnamon

  11. ½ tsp nutmeg

  12. ½ cup chopped walnuts or pecans

Instructions:

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment.

  2. In a large bowl, whisk together mashed sweet potato, eggs, oil, maple syrup, and vanilla.

  3. In another bowl, mix dry ingredients: flour, baking soda, baking powder, salt, and spices.

  4. Combine wet and dry ingredients until just mixed. Fold in nuts.

  5. Pour batter into loaf pan and bake for 45–55 minutes, or until a toothpick comes out clean.

  6. Cool before slicing.
