Beetroot Chocolate Loaf

Yield: 1 loaf (8–10 slices)

Ingredients:

  1. 1 cup cooked and mashed beets

  2. 2 eggs (or flax eggs)

  3. ¼ cup melted coconut oil

  4. ¼ cup maple syrup

  5. 1 tsp vanilla extract

  6. 1 cup oat flour

  7. ½ cup almond flour

  8. ⅓ cup unsweetened cocoa powder

  9. 1 tsp baking powder

  10. ½ tsp baking soda

  11. Pinch of salt

Instructions:

  1. Preheat oven to 350°F. Line a loaf pan with parchment.

  2. Blend beets, eggs, oil, maple syrup, and vanilla until smooth.

  3. In a bowl, whisk together flours, cocoa, baking powder, baking soda, and salt.

  4. Combine wet and dry ingredients.

  5. Pour batter into loaf pan and bake 40–45 minutes, or until a toothpick comes out clean.

  6. Let cool before slicing.
