Instructions

  1. The Sear: Heat the avocado oil in a cast-iron skillet. Pan-sear the paneer cubes until they develop a golden, resilient "crust." Set aside.

  2. The Base: In the same pan, add the diced tomatoes. Sauté them until they break down into a thick, jammy consistency. This creates the "gravy" that will coat the paneer.

  3. The Aromatics: Add the onions, peppers, and ginger. Flash-fry for 2 minutes—you want them vibrant and "al dente," not soft.

  4. The Integration: Toss the paneer back into the pan with the green chilies.

  5. The Glaze: Pour "The Secret" (the coconut aminos and ketchup mixture) over the pan. Let it sizzle for 60 seconds as it binds with the fresh tomatoes to create a glossy, flavorful seal.
