1 lb seasonal root vegetables (carrots or sweet potatoes), chopped

6 oz firm, salty artisanal cheese (like Halloumi or Feta)

Instructions

Preheat your oven to 200°C (400°F).

Toss the chopped roots with the oil/butter, herbs, and salt. Spread them evenly on a baking sheet.

Roast for 25 minutes until the edges are caramelized and tender.

In the final 5 minutes, nestle thick slices of cheese directly onto the pan among the vegetables to soften.

Remove from the oven and drizzle with the raw honey while the dish is warm but not boiling.
